“You must try Franklin Barbecue whilst you’re in Austin”, my host Lisa advised. “Sounds good, I’ll swing by at lunchtime.” I replied. Her response confused me, “You’ll need to be in the queue by 8am”. “I’ll what?”
By 8.30am, I am sat at the back of a long line in a deck chair, an icebox of beers, warm sunshine & the conversation of fellow queuers for company.
At 12.46pm, the wait was over. The reward, the most tender beef brisket, melt in the mouth ribs, juicy turkey, and sumptuous pulled pork with bourbon and banana cheesecake to finish.
Worth the wait? Most definitely.
Favoured by celebrities including President Obama, Franklin’s was originally a food truck, before it relocated to its current no-frills location in downtown Austin. Using humanely raised Meyer Angus beef, without hormones or antibiotics, in addition to a secret spice mix and an offset smoker, it is revered across the whole of US, not just Texas, which is no mean feat.
